BODYBUILDING RECIPES: LENTIL BURGERS

Makes 4-6 Burgers
1 cup finely chopped red onion
1 1/2 cup cooked lentils
1/2 teaspoon pepper
1/2 teaspoon mustard
1/2 teaspoon Indian spices (or your favorite spice blend)
1 teaspoon Tabasco sauce
Non-stick cooking spray
4-6 Whole wheat hamburger buns
Fresh tomato slices
Cheddar or Goat cheese
Place half the lentils in a medium sized bowl, using an immersion blender, mash the lentils until smooth, add the unblended lentils back into the bowl.
Combine remaining ingredients into the bowl and form into patties.
Spray a non-stick pan with cooking spray and place over medium-high heat.
Add burger patties to pan.
Cook on either side until well browned and slightly crispy.
Serve immediately with toasted hamburger buns.
*If cooking outside on a grill, place a non-stick pan directly on the grill.
**Adding an egg will create better binding for a non-vegan version of this burger.
