INGREDIENTS
4 halibut fillets (6oz each)
1/4 cup white cooking wine
2 tbsp olive oil
1 garlic clove, minced
1 tbsp lemon zest
2 tbsp lemon juice
1 tsp oregano
1 tsp thyme
3 tbsp whole wheat bread crumbs
1 tsp dried parsley
Salt and pepper

DIRECTIONS
1. Preheat the oven to 350°F.
2. In a bowl, combine parsley, wine, bread crumbs, lemon juice and zest, oregano,
thyme, oil, garlic, salt and pepper. It should form a paste like mixture
3. In a baking dish, coated with cooking spray, place the fillets and spread each filet
with the mixture
4. In a third shallow dish, mix together the almonds, bread crumbs,
parsley, and pepper
5. Bake for about 15-20 minutes or until the fish is white in the
center and the herb paste has formed a crust
