1/2 head of cauliflower
2 cloves of garlic (minced)
2 tsp of Extra Virgin Olive Oil
1 tsp of sesame oil
1 egg (beaten)
3 green onions (chopped)
dash of pepper
low sodium soy sauce - to taste
To grate your cauliflower, you can use a cheese grater. You only need half of the head, but I suggest grating all of it then storing half in a freezer bag for next time.
Heat the oil in a wok or large non-stick skillet on medium to med/high heat. Add the cauliflower and garlic and stir fry until cauliflower is tender, not mushy.
Stir in soy sauce and sesame oil.
Push the cauliflower to one side of the pan; pour in the beaten egg lightly scramble the egg briefly and then mix into the cauliflower .
Add the green onions and pepper and toss.
NOTE: add some shrimp, chicken or protein of your choice to make a great faux Chinese meal!
